"Truly a magical holiday blend. My favorite this year. I may order a third bag and keep it for a rainy (or snowy) day. I really get the notes of gingerbread, but it's not overbearing or "spicy" beyond a sweet Christmas cookie type of spice. cocoa nib also comes through pretty well, and the candied fruit rounds it out. I drink this black most of the time but it lends itself very well to cream and sugar. Use real maple syrup for a real treat. My recommendation for this coffee is a v60 pour over using the 4:6 method, and about a 1:16 ratio, but you can go lighter if you are drinking it black. I just like it thick and rich. 205° seems to work fine at a medium-course pourover grind (50 on Breville Smart Grinder Pro), just make sure to agitate the grounds enough to lengthen that drawdown time to stay under 3:45 or you're getting close to overextraction. Simply put, this coffee deserve all five stars and a spot under the one on top of your tree. Bluebeard Coffee Roasters, you've made my holiday season merry and bright.
