Last week, Rainier Coffee Roasters brought me a sample of their newest coffee, Costa Rica Olman Vargas Natural, and with just one sip, I knew it was something truly special. This medium roast is bursting with big, upfront notes of cherry cordial and strawberry-rhubarb pie filling. As the cup cools, the flavors darken, become more plum-like, with a layer of sweet cocoa and ginger spice. The finish is syrupy, like marmalade, with a floral hibiscus and a hint of shiso leaf that feels a little fresh, a little spicy, and a lot delicious. It’s a complex cup, but the flavors blend together perfectly. It feels as happy, and cozy, as a bright red sweater for your morning.
This micro-lot comes freshly harvested from grower Olman Vargas Chavarria and his 22-acre farm in Alajuela, Costa Rica. Located near the capital city of San Jose, Costa Rica’s central valley is home to three volcanos— Irazu, Barva, and Poas— that feed nutrients into the soil and provide ideal coffee-growing topography. As we know, specialty coffee is a product of both nature and nurture. Mr. Chavarria uses his own micro-mill, which allows him to control every aspect of the coffee’s sorting and drying. The results, in this case, are stunning, with a depth of flavor that you simply have to brew to believe.
It’s a rare treat to enjoy a fruity single origin with a more developed roast profile. This bold, medium roast Costa Rican is sweet like candy, yet robust and flavorful, with big notes of cherry pie, candied plum, ginger cookie, and hibiscus tea.
