This micro-lot comes freshly harvested from grower Olman Vargas Chavarria and his 22-acre farm in Alajuela, Costa Rica. Located near the capital city of San Jose, Costa Rica’s central valley is home to three volcanos— Irazu, Barva, and Poas— that feed nutrients into the soil and provide ideal coffee-growing topography. As we know, specialty coffee is a product of both nature and nurture. Mr. Chavarria uses his own micro-mill, which allows him to control every aspect of the coffee’s sorting and drying. The results, in this case, are stunning, with a depth of flavor that you simply have to brew to believe.
