Also known as Celebes, Sulawesi is an island of Indonesia, amoeba-like with multiple outer peninsulas and a central core of mountains. Within the Southern highlands lies the Land of the Heavenly Kings, or Toraja: they're known for their traditional curved roofs, some of the world's oldest cave paintings, and pure coffee magic. Torajans still grow their coffee by traditional methods, and the whole community comes together to pick and process the beans.
With everything done by hand, fine Sulawesi beans have a special, hand-crafted nature. This Sulawesi Toraja is triple-picked; while most coffee from the region is sorted twice, this lot is sorted an additional time. This scrupulous procedure makes a real difference. Sulawesi coffees are distinct for their intense creaminess-- you’d almost think you added a splash of milk! The acidity in this roast is low, but dynamic, bringing out an array of notes that might get lost in other cups: you’ll taste florals, more savory notes, sweet vegetable sugars like green pepper, and fresh tobacco and spices. I'm not the biggest fan of dark roasts so I wasn't crazy about this coffee, but my dad, who is a dark roast lover, thought it was good. I think fans of Sumatra Mandheling coffee would like these beans as well.|
