Also known as “elephant” beans, these XL-size Pacamara beans are a rare and special varietal known for their rounded, complex profile. This smooth, sweet cup is bursting with honeyed fruit flavors and a piquant, cinnamon-candy finish.

Roaster's Notes

Longtime friends Ricardo Ariz and his family are now part of the Olympia Coffee family. Working and growing together after being Ricardo's first direct trade relationship, we've only seen improvement in his quality. We first fell in love with his Pacamara, an uncommon varietal created in El Salvador and designed for exceptional quality. It reminds us of what specialty coffee is really about, with delicate flavors coming from very slow cherry maturation. All our coffee from Ricardo Ariz is now fully washed, fermented underwater, and dried on raised beds. These processing techniques alone make Ricardo a rare breed in El Salvador. This is a selection of the Pacamara varietal at Ricardo Ariz's farm El Aguila, the Pacamara grows in the center of the farm at 1650 meters. The Pacamara tends to be a very sensitive varietal at the farm, costing more in management and labor. But when you ask Ricardo why he continues to grow Pacamara he simply says " It was the first varietal my father planted here, and it's an awesome cup".
