If you've never had an anaerobic fermentation coffee before, get ready for something special! Rare and rave-worthy, anaerobic coffees are the newest, hottest type of coffee in the specialty scene. This light roast is bursting with punchy, sweet-tart flavors and loads of sparkling personality. Aroma is full-on chocolate and strawberry, and the initial flavors are effervescent and intensely fruit-forward, like berry seltzer, or kombucha. Orange-toned fruit throughout, but not citrus — more like apricot, peach, papaya, sweet like candy. In the finish, flavors dive into a syrupy, chocolate-caramel swirl. These delicious, distinctive flavors come from an innovative new processing technique where coffee cherries are sealed with brewed yeast and allowed to ferment for 72 hours. This changes the chemistry of the beans, encouraging more lactic acids, similar to fermented foods like sauerkraut, yogurt, sourdough bread. The result is a complex, sparkly flavor profile that's sweet, sour, tart, and tangy — striking, memorable, and truly original in the world of coffee.
