One of the best-kept secrets of the coffee world, Panama supplies less than 1% of the world's coffee-- but its rich volcanic soil, high altitude growing areas, and international influence combine to make Panamanian beans true treasures. Panama is where the geisha bean first gained its status as one of the most prized (and expensive) varietals in the world, and it's also known for success with experimental and complicated processing methods.
We're especially excited about this coffee because Fundamental is the only roaster on the West Coast to get his hands on these special beans. He put some aside just for us (and you!). This coffee is from Boquete, the country's oldest and most prominent growing region, and the province of Chiriqui: "Valley of the Moon". It's top-grade SHB, "strictly hard bean", indicating a growing altitude beginning at 1350 meters, and topping out at 1650 meters or higher. Higher altitude beans mean brighter flavors, a cleaner taste, and a more consistent cup.
As an "old-school" master of Seattle coffee, Scott prefers darker roasts with more developed flavors. His Panama is delicious and toasty medium roast: just dark enough to bring out the caramelized-sugars of the bean while preserving its high-grown brightness. It's luscious, light but velvety in texture, with notes of sweet cocoa, toasted nuts, earthy baking spice, and just a hint of juicy purple plum. Hold on to your (Panama) hat: this 1% coffee will 100% blow you away.
