Curator's Notes

I’m in love. We just cupped True North’s newest Guatemala La Folie, and I know you’ll love it too. We’re talking a cup of super rich, super smooth chocolate, with a soft and creamy body like whipped cream and a mellow sweetness like pear preserves. It’s coffee and creamer in one fantastic cup, and it makes the best full-bodied cold brew we’ve ever tasted. You’ll be drinking this one all summer long.

Roaster's Notes

Guatemelan Finca La Folie is from the Antigua region. The flavor profile is chocolate, pear, blackberry. Delicious, super rich body. Works well for pour over, traditional cold brew (over night steep) and flash brewed/Japanese iced coffee.

"What a great coffee. Brewed both hot and Japanese iced with the v60. Flavors were outstanding. chocolate was upfront with a slight pear fruitiness. But what my this coffee really shine was the honey flavor throughout. The honey note truly made this one special. "

"Really nice example of Central American on the lighter end. I enjoy the dark chocolate/blackberry backbone and found it to be a coffee that isn't too far in any one direction (fruity, earthy, acidity) but makes for a familiar but interesting cup. It's on the lighter side of medium, which i enjoy, and would be a great starting roast for anyone that enjoys darker roasts but is interested in the other side of things. "

"Great coffee, just not my favorite that I've had. A bit sour or acidic on the front."
KELLY 07/22/2020

"The drink was a little bitter on the front end with a stronger acidic overtone that dimmed the other flavors of the coffee. Will try in the french press tomorrow to see if improved."
