Nothing says holiday like a big plate of cookies, and chewy, coconut macaroons are a cookie classic. As with coffee, macaroons were likely invented in the Arab world over 1000 years ago, and traveled into Italy via trade. Our first reliable record of the macaroon can be traced to Italian monasteries in the 8th or 9th centuries. The cookie made its way from Italy to France, refined into today’s French macaron. It became a coconut confection in the late 1800s, upon the discovery that shredded coconut is more shelf-stable, and easier to ship, than fresh coconut. Like Hawaiian coffee, coconut is a special, island-grown, tropical treat; of course the two flavors go hand in hand.
