Roaster's Notes
Xico is ideally situated near the base of the Cofre del Perote Volcano, where is very fertile and suitable for almost any crop. However, because of Xicos close proximity to the Gulf of Mexico, cold air circulates from the north creating an unsuitable environment for coffee growing above 1800 meters due to the constant risk of frost. Farms here range in size from 2-3 hectares. Xico’s close proximity to Coatepec, also known as the coffee capital of Mexico, is a source of motivation for producers here. In order to be competitive in the local market, farmers have put more effort into planting and harvesting, vastly accelerating the pace at which they improve their precision and quality.
