Roaster's Notes
This coffee is a community lot made up of ripe cherries from 20 farmers throughout the Mendosayoc municipality. The average farm size in this region is only 1.5 hectares and the entire coffee growing process (from planting to picking to processing) is taken care of by farmers and their families. Most farms have small depulper machines, fermentation tanks, and drying beds or patios on-site, allowing total control over the processing of their coffee.
