Curator's Notes

This sugarcane processed decaf captures all of the sweetness we love in a classic Colombian coffee. Some of us taste neapolitan ice cream, others taste hot chocolate with marshmallows. Either way, bring on the whipped cream!

Roaster's Notes

Retails $16 This decaf was introduced to PROVISION by Azahar Coffee, our Colombian sourcing partners, and was produced in the Quindio department of Colombia. This coffee represents a group of smallholder producers from the municipalities of Calarca, Cordoba, Genova and Pijao. First, these producers carefully process the coffee using the washed method. Then, with the help of the Cooperativo de Caficultores del Quindio, or "CCQ," they decaffeinate it using a method known as “sugarcane” decaffeination. Sugarcane Decaffeination, also known as the EA method, uses a solvent made from a mix of acetic acid (vinegar), and a natural extract distilled primarily from sugarcane, as well as blackberries, beets, and grapes. The beans are steamed to open up their pores, and are then rinsed with the solvent. After this process, the beans are dried and sealed with a light coating of a natural wax to prevent further drying. This wax is flavorless and in no way affects the qualities of the coffee. Thanks to the initial quality of the beans, along with the sugarcane decaffeination process, we share with you a truly special decaf that's as vibrant and sweet as any other coffee. The flavors remind us of Neapolitan ice cream with notes of ripe strawberries, sweet vanilla, and rich chocolate.
