Curator's Notes

The apple of our eye! This bright cup carries a big bite of tart green apple, balanced by a sugary, milk chocolate swirl. This organic, fair-trade cup is a mixture of small lots from Olympia's relationship farm, San Sebastian in La Plata, Huila. Olympia Coffee maintains a staff cupper in Colombia, who selects the top lots from the farm and sends hundreds of samples up to their roastery—the best of which are destined to become this special roast. This partnership is a unique, special way for Olympia to ensure their high standards for the coffee and the wages/working conditions for farm employees.

Roaster's Notes

Our San Sebastian Reserva combines lots we selected from hundreds cupped--from producers in San Sebastian De La Plata, Huila. These producers farm at elevations above 1,700 meters on three hillsides surrounding the community of La Plata. After manual de-pulping, their coffee beans are fermented in tanks for up to 24 hours before being washed and laid to sun dry on parabolic beds. The creation of the San Sebastian Reserva project is intended to develop lasting, quality-focused relationships between farmer and roaster. In order to ensure that we are working in tandem with our growers, the project incorporates a staff cupper in Colombia who works with both farmer and roaster; hundreds of samples of coffees fresh from harvest sent to Olympia Coffee to be cupped every week throughout the two growing seasons in La Plata; and multiple farm visits from the staff of Olympia Coffee.

"First coffee out of my latest sample box. Enjoyable, with hints of sweet apple and a surprising amount of chocolate. Pretty good! "

"There was a green apple presence but in more of a sweetness than a tart green apple. I would say chocolate dominated the cup. It was an enjoyable cup but nothing stood out to make it spectacular. "

"Of the three Beanbox cups in my coffee ☕️ flight early this morning this one would be my least favorite. It was solid and a touch of green apple stood out but overall not highly impressive. Enjoy if you like but I liked the Rwanda Musara in my flight much, much better!!!!!"
