Exclusive to us, Honduras Zopilote Natural is a real “wow” coffee, bold but lively, and it takes to a darker roast like a dream. The luscious profile reminds us of aged Pedro Ximinez sherry wine. A departure from the usual red fruit of natural coffees, this one is spicier, more savory, with exotic notes of dates, figs, raisins, a syrupy, tropical-fruit body and a long, complex finish of caramelized sugars.
This microlot comes from El Paraiso, a growing region in central Honduras that’s become noteworthy for producing this year’s Cup of Excellence award winner. Honduras has a small, but growing, specialty scene, one that lacks more for marketing panache than quality product-- but head-turning coffees like this one are paving the way for more recognition within America and abroad. Fine Honduran coffees are aromatic and fragrant, known for nutty, caramel, and vanilla tones, with a quietly vibrant set of fruit and citrus flavors. Because of the caramelly notes, Hondurans are versatile coffees, with profiles that really sing-- like this one-- within a darker, toastier profile.
