Curator's Notes

This lot was grown by a group of 156 small coffee farmers with quality and sustainability in mind. Roasted dark, but not burnt, Fundamental’s signature roasting style coaxes out developed flavors of black sesame, chocolate, and rich fruit.

Roaster's Notes

Santa Palencia is a group of small coffee growers located in the central zone of Guatemala, grouping producers from 3 different departments due to its geographical location, which are made up of El Progreso, Jalapa and Guatemala. Currently there are 156 small producers in the Palencia group under the direction of Gregorio Perez Jimenez. Mr Jimenez has more than 50 years experience working in coffee in this region, and has been working with our sibling company, Mercon since they opened in Guatemala. All together, the 156 farms have planted pacas, sarchimore and catuai on 400 hectares of land, with an additional 78 set aside for bioreserve. Santa Palencia is a member of LIFT. Through the LIFT programs they have found a considerable increase in production and quality. They are also RFA and UTZ certified, increasing the overall sustainability of the farm.

"Nice morning coffee ☕️. Darker than I usually have but I enjoyed it. Thanks to Kai for sharing with me while I am waiting for my subscription box tomorrow!"

"For a dark roast, I like this. I agree with the notes provided--this coffee has a dark backbone, but doesn't taste burnt or bitter. Lots of chocolate and nutty (think Brazil nut and walnut). Robust but not overwhelming."

"One of my new favorites!"

"This one was really good. It was dark and intense. But very smooth and not burnt which most dark roast I’ve had tend to be. Hint of dark fruit and nutty and chocolatey. I don’t usually love dark roasts but this was very good!"

"This is one of the better roasts I received this month. A little smoky, with a mild chocolaty flavor. Tastes very nice brewed as a latte."
