Curator's Notes
This lot was produced by seventy three families of the Dukurai tribe, who reside in small villages along the eastern ridge of the Kalitlau mountain. Sweet Irish cream and nutty toffee flavors will make you want more (and more) of this Timor.

Vanilla,Irish Cream, Molasses, Hazelnut, Toffee, Persimmon, Silky Body ((Sucafina: Silky, floral, fruity, grape "Producer: multiple small holder farmers Region: Letefoho Subdistrict, Ermera Municipality Varieties: typica and hibrido de Timor Processing: Washed Elevation: 1400-1900 masl Wet Mill: local machine pulping at farm level Dry Mill: Timor Global mill Harvest: June-August Processing: Fully washed & Sun-dried This special coffee lot is a blend from four farmer groups -- Lekisala, Taurema, Hatlala, and Loiludo --representing a total of 73 households in the Dukurai tribe. They are settled in village communities along the eastern ridge of the mountain for which this coffee is named. In practice it is fully organic – although not certified – and grown under casuarina shade trees. Coffee cherry is hand-harvested from morning through late afternoon and then brought back to the village where it is further separated into ripe cherry for processing. Fermentation can take up to 36 hours due to the low nighttime temperatures. After fermentation is complete the parchment is hand washed and then dried on raised beds or tarps over 5-10 days. After quality inspections, the farmers are paid a premium price of 90% above what they would earn by selling cherry to the main buyer in the region.
