Honey processing is where the beans are dried within their natural skin, or mucilage, after most of the coffee cherry has been washed away. As the beans dry within this skin, they turn a honey-brown color — this gives the process its name. But honey-processed coffees have a degree of honeyed flavor as well; when done right, the coffees gain a sugary depth and a rich body, while still retaining the clean, crisp and bright nature of high-grown Costa Rican beans.

This lot comes from Santa Elena estate, run by Luz Marina Trujillo. It's rare for a Central American coffee estate to be owned by a woman, but Luz Marina is a great example of success. Her sustainability program is one of the finest in the country, minimizing synthetic additions and relying on holistic solutions for fertilizers and pest control. It's no wonder her farm is one of the most renowned locations to find Central American coffee today — and one of the first to perfect honey processing in Costa Rica.
