The varietal is a hybrid of Pacas and Maragogipe varietals, created to achieve the best of both beans in terms of yield, disease-resistance and, of course, flavor! Believe it or not, it took 30 years of research to perfect the Pacamara. The flavor profile of these coffees is rich and complex, captivating, and unusual, with a full, creamy body and notes that swing from fruity and elegant, to savory and deep. Primarily grown in El Salvador, you'll often see Pacamara coffees dominating competitions like Cup of Excellence. This Las Casitas microlot is a blend of Pacamara, Red and Yellow Catuai, and Caturra beans, from COE award-winning farmer Luis Alberto Balladarez Moncada and the top coffee region of Nueva Segovia. It's rare to see great Nicaraguan cups in the US these days; their coffee-growing industry has taken a number of hits in the past few decades, from hurricanes and civil war, the Sandanista Government and the recent impact of Venezuela's economic crisis.
