Fine Mexican coffee is the white wine of the coffee world: light and delicate, with a buttery caramel roundness and flavors of chocolate and cocoa powder, cinnamon spice, toasted nuts, and clean, gentle acidity. This roast comes from small-holders within the Guadalupe Miramar village of the Santa Maria Yucuhiti municipality, near the large Cañada de Cuicatlan canyon. The canyon and its surrounding valleys create an unique microclimate for growing tropical fruits, avocado, and of course, coffee. Today, Mexico is one of the largest sources in the U.S. for fair trade and sustainably-grown beans. In the Cañada region, a majority of farmers and coffee workers still speak the indigenous language, and grow coffee without pesticides or fertilizers, using age-old methods that protect and support the natural environment.
