Guatemala Javier Martinez is round, sweet, and deliciously creamy, like a butterscotch hard candy, with notes of chocolate, toasted hazelnuts and a hint of cherry. Clean, crisp acidity in the finish, like the perfect ruby red grapefruit.

Bluebeard Coffee Roasters is a self-described "253rd wave" coffee roaster and cafe in Tacoma, WA, just south of Seattle proper. Their coffees are distinctive for their toasty, nuanced roasting style, which results in light, sweet, and fruity coffees that have a deliciously robust profile, with a backbone of chocolate and caramel. Javier Martinez is a fine example of top-notch coffee from Guatemala’s most well known growing region, Huehuetenango, located in the northern highlands along the border with Mexico. Like this cup, the finest from the region are recognized by their lush bodies, their superb sweetness, and their desserty, fruit-fondue flavors. Bluebeard Coffee Roasters Story

Javier Martinez lives and produces coffee in Peña Roja in Huehuetenango, and his farm extends up to 1780 masl. He fully dedicates himself to coffee production, meaning that he doesn’t have another job in town. He has two coffee parcels --Flor del Cafe and El Aguacatal, which he manages with his mother, Porfiria Martinez. He primarily farms Caturra and Bourbon varietals.

Javier has come up with a unique system to homogenize fermentation in processing. 24 hours after de-pulping cherries the coffee finishes fermentation over a further 12 hours in fresh cold water before being fully washed. The controlled temperatures and prolonged time in anaerobic conditions contribute to a very clean, bright and creamy coffee.
