When Casa Brasil founder Joel Shuler went looking for high-quality Brazilian coffee in 2005, a local roaster told him flatly: "There is no such thing." Challenge accepted. Joel spent the next three years on the ground in Brazil, interning at co-ops, visiting hundreds of farms, and working his way up to judging national competitions. He eventually earned a master's degree in agricultural engineering from one of the world's top coffee research institutions. Today Casa Brasil is a pioneering force in bringing exceptional Brazilian beans to the U.S. market. I got to see that firsthand a couple of years ago, when I joined their head buyer on a Cup of Excellence jury in Brazil — and came home more convinced than ever that this is the roaster we needed to have on Bean Box. In the cup, expect the full range of what Brazil can do: naturally sweet, chocolaty, nutty, and surprisingly complex.

"I make all of my coffees (except espresso) on my v60, as i like how this gets the most clarity out of the coffee (ie I can taste more of the flavor notes). I definitely picked up the berry flavor but it wasn’t too acidic. It does have some depth to the body, so I definitely consider this a medium body roast versus medium/light (this is what is described on the package). It’s a nice, simple coffee. I’ve definitely had better (crisper and clear flavors, complexity) from other roasters but this is a solid everyday drinking roast. You get that “coffee taste” but with notes of fruit. "
