Roaster's Notes

This community lot comes from coffee grown by 40 smallholder farmers around Taipiplaya, most of which utilize traditional shade-grown methods for coffee production. The average farm is 2 or 3 hectares (approx. 5-8 acres) and has diverse crops that include coffee, pineapple, citrus, and a small amount of coca allowed by the government. Coffee cherries are harvested during the day, sometimes by the producer’s family, but most often by hired “cosechadores.” Most producers do not have the capacity to mill their own coffee so it is sold in cherry form. The cherries are trucked into the town collection sites by Toyota vans, heavily reinforced to handle the weight. Cherry is collected from 5pm into the night. After a dry fermentation period in steel tanks lasting 12-14 hours, the coffee is depulped, fully washed, and left to dry on raised beds for 15-20 days.
