Roaster's Notes
Aquiares Estate, known as "Aquiares Coffee and Community," is Costa Rica's largest farm and home to 1,800 people. Founded in 1890, it was transformed by Alfonso Robelo in the 1980s after he fled Nicaragua's civil war. Alfonso improved farmworker security by enabling home ownership and fostering pride in coffee production. His son, Diego, now leads the farm's innovative specialty coffee practices. Committed to sustainability, Aquiares focuses on carbon neutrality, environmental research, and agroforestry. Their Centroamericano H1 hybrid variety is high-yielding, rust-resistant, and offers a complex flavor profile. Their Red Honey process enhances the coffee's sweetness and complexity.
