Roaster's Notes
This coffee has the same story as our other current Ethiopian option, but stands apart in its processing method. This microlot underwent anaerobic fermentation after harvesting. The cherries were sealed in oxygen-free barrels and fermented for nine days. The result? A remarkably unique flavor profile, with unexpected notes of concord grape. No additives — just a natural transformation through the absence of oxygen. The outcome is truly exceptional.
