Roaster's Notes
Sitio Canaã is a 10-hectare Brazilian coffee farm owned and farmed by João Hamilton. João has partnered up with our primary Brazilian coffee producers, Marcos and Felipe Croce who own the renowned Fazenda Ambiental Fortaleza (FAF). FAF works with neighboring producers to encourage natural and organic farming methods. Sitio Canaã began as a conventional farm, but after partnering with the Croce family at FAF in 2006, it shifted toward more sustainable methods. Today, the farm steers clear of pesticides, uses synthetic fertilizers sparingly, and focuses on maintaining healthy soil through natural ground cover and reforestation. Ripe coffee cherries are carefully handpicked, thoroughly sorted, and then dried on raised beds for 14 to 20 days.
