When brewed, the cup is smooth and lush, full of syrupy black cherry and dark chocolate: think Fruit Loops and Count Chocula, combined. Coffee lovers seek out natural-processed Ethiopians for their intense berry flavors, and this roast is an excellent example of how deliciously sweet these coffees can be. Ethiopia is famously the "birthplace of coffee", where heirloom coffee plants grow wild throughout the lush, green highlands. Natural processing, where the freshly-picked beans are spread out to dry in the sun, has always been the traditional means of processing coffee, because it requires less water than wet processing. When done right, naturally processed beans retain a ton of fruit flavor, and often carry a pleasant wine-like acidity. They can be punchy and very sweet, with a heavy body and a pleasant, honey-like texture. With its big body, juicy flavors, and spiced cocoa undertones, this sweet roast is all of the above… with a cherry on top!
