Curator's Notes
This Fair For All microlot comes from producer Amparo Pajoy and her small farm in the mountains of Huila, Colombia. The profile is exceptionally smooth and buttery, with a silky, chocolate-milk flavor that lingers on your tongue.
Roaster's Notes
This is the 36th micro lot we have purchased from Amparo Pajoy over the past 13 years of partnership. Often these micro lots represent just one week of harvest—offering a zoomed-in flavor snapshot of the precise location, varietal, and seasonality of Amparo’s coffee. Amparo Pajoy is a coffee farmer from San Sebastian de la Plata, Colombia. She has spent her entire life in pursuit of improving the quality of life for her family, and over the years it's been incredible to watch her make big strides both in coffee production and in creating a better life for her family.
