Roaster's Notes
Wooden fermentation tanks aren’t standard equipment in modern coffee processing, but the growers working with Sicobi in Oaxaca’s Sierra Sur keep using them. Combined with the region’s unusually dry climate, these tanks create conditions that make fully washed coffee taste almost natural-processed. This year’s lot brings hazelnut brittle, merlot, and chocolate cherry—a heavy, round body with fun, boozy acidity that doesn’t fit the clean, bright stereotype of washed Mexican coffee. Five hundred growers across six communities produce this exceptional coffee between 1,300 and 1,900 meters, but only a small percentage of the harvest meets export standards.
