Roaster's Notes
Eber, Julieta and Ariel lead ten coffee-producing families in the community of Talea de Castro, Sierra Norte, Oaxaca where Roseline has collaborated to showcase two coffee lots using the same fruit with two distinct processing methods -- this being a "traditional washed" lot, in this case meaning that the coffee has been fermented in a tank for 48 hours and washed prior to patio drying. This surprisingly alluring coffee with a clean cup that highlights the density and sweetness unique to Oaxaca, Mexico.
