Roaster's Notes
Finca Santa Juana sits at 1,600 to 1,700 meters in the Apaneca-Ilamatepec mountains of western El Salvador, a UNESCO biosphere reserve where volcanic soil and consistent winds create conditions that are hard to replicate. The Pacas family has farmed this land since 1927, and this lot features Bernardina, a variety discovered on their estate that traces its genetics back to Ethiopian Agaro and Geisha. Natural processing draws out flavors of Tempranillo grape, Luxardo cherry, and cocoa powder. The body is smooth and creamy with soft acidity that lets the fruit and chocolate sit together without competing.
