Roaster's Notes
This lot is made up of heirloom varieties from three producers and processed at the Gedeb washing station, owned and operated by Sali Chebeso. At 2,150 masl, Gedeb is one of the highest altitude towns in this region and all coffee harvests are transported to the washing station by hand, car, or horse. Cherries are sorted and dried for an average of 20 days until they reach an optimal humidity of 10%.
