Curator's Notes

Our friends at Dancing Goats® Coffee just released Colombia Las Hermosas, and it's a beautiful roast indeed. This dark roast is full of the rich, balanced flavors that make Colombian coffee a household name — it’s arrestingly bold, with a full body and complex notes of black cherry layered with toffee. The finish is round and clean, like a buttery chocolate-hazelnut spread and toasted pecan.

Roaster's Notes

$17/bag We are pleased to offer yet another incredible coffee from our export partners at InConexus in Colombia. We have worked with them for about 11 years now and are consistently amazed by the quality they are able to find. InConexus provides agronomic support and education for all of its producers, which leads to improving cup quality and increasing yields year after year. Additionally, InConexus provides access to specialty coffee markets. This offering is from a producing group located in the town of Ataco in the region of Tolima. The group is called Asospac (Association of agricultural producers of Santiago Perez) and has about 57 producing members. Tolima is still a relatively new and developing area in the Colombian coffee landscape. Producers are dimunitive and open to newer varieties and processing techniques. Colombia was hit very hard by leaf rust in the mid-1980s. At that time, Cenicafe, a Colombian coffee research institute, set to work developing rust-resistant coffee varieties. The Castillo variety is a result of that research. While some wondered if the potential cup quality of these varieties would be compromised, blind taste testing proved those critics wrong. This fully washed coffee is grown at high altitudes. As a result, it ripens slowly and has a very dense bean or seed. Because of this it lends itself well to a more developed roast profile and displays the characteristics we love in a darker roast profile. In this complex cup, we find flavors of black cherry layered with toffee. The coffee is sweet and full-bodied and has a hazelnut-like finish.
