https://cambercoffee.com/product/colombia-cerro-azul-gesha-8oz-pre-order/ We consider ourselves lucky to have worked with Rigoberto Herrera, the visionary owner of Cerro Azul, for many years. It’s no wonder that Rigo’s coffees have been selected by barista champions from Japan to Denmark. It’s quite difficult to put a label on the cutting edge process that Rigo’s team carefully applied to this lot. After the harvest, whole cherries are fermented in barrels for up to twenty two hours. Next, the cherries are depulped and fermented again for thirty five hours. The resulting fragrance is floral and fruited, with fresh jasmine flower and yellow peach. This initial bouquet prefaces the cup itself, where you will find notes of satsuma orange, black tea, bergamot, jasmine, and pineapple. 2021’s Artist Series features work from Tilly Mint.
