Roaster's Notes
This coffee is processed with the utmost care and precision. Duglas and her family handpick every cherry, ensuring only the ripest, most vibrant cherries make it to processing. Duglas takes pride in doing the picking herself. After harvesting, the cherries are depulped and fermented for 24 to 36 hours, with close attention paid to maintaining the flavor integrity. The coffee is then washed thoroughly and dried on raised beds, where it’s carefully turned and monitored for consistency. This meticulous, hands-on approach ensures the coffee is clean, bright, and full of character, with a smooth body and subtle, sweet notes.
