"We use a very good Drip machine that blooms coffee 1st. We grind our beans right before brewing using a very good burr grinder, and measure the beans 1st by grams . This Coffee is dark, but not too dark. Not overly strong like a French roast. Not too acidic. Very well balanced with a very distinct, but well-balanced nut and dark chocolate notes. This and Cafe Carmelita are, by far our 2 favorite coffees (Holy Ship, which is seasonal is our absolute favorite). It has also work well with french press, which intensifies the darkness a bit, and brings out more of the chocolate notes. It has also been good using it in our espresso machine, but that really intensifies the dark roast profile, so we do lattes rather than Cappuccino with it. Have not tried it with our pour-over coffee maker. "
