Curator's Notes

This lot is honey processed and dripping with sweetness. Think poached pear drizzled with a sticky caramel, and a rich milk chocolate body. This coffee is a sweet and approachable way to explore Colombia's unique offerings.

Roaster's Notes

Honey Process $15 Think: bosc pear, plum, and baker’s chocolate This coffee represents the very first honey-processed Chiroso (a mutation of the Caturra variety) lot produced by Pedro Echavarria at the family farm Finca Agualinda. Pedro’s father, Pedro Echavarria Sr., started growing coffee on a small abandoned farm in the 1970s. Finca Agualinda has been at the heart of the family’s coffee growing operation since it was purchased in 2003. It was initially planted with the Castillo variety before they began the two-decade long journey of switching to high quality varieties in the higher elevation parts of their farms.

"When I first opened the sample bag, I was shocked by the intense aroma of milk chocolate. “Ooh,” I thought to myself, “this is gonna be good!” Brewed it, took a couple sips of the black coffee before adding my oat milk and…it’s fine? No “poached pear,” just a lot of bitterness and acid. There may be some milk chocolate and caramel flavors (there’s a chocolate olate sweetness lingering in my mouth as I type this that is quite pleasant), and this guy definitely benefits from your creamer of choice. Decent for a cup/2oz bag, but I wouldn’t order more. "

"On first tasting and consideration this coffee seemed a little darker than I expected. Did not get any pear notes at all. However as it cooled there def was a combination burnt caramel/chocolate. Glad I got this in a sample bag. Could take maybe two cups of this one but no more."
