Roaster's Notes
The communities of El Tablon de Gomez put sustainability at the forefront of their farms. They once grew other crops like corn and peanuts but have switched their focus to coffee. Increased knowledge of agronomy and nutrient cycles has improved the soils and consequently ecological and economic sustainability. Replenishing the soil, maintaining native forest, and utilizing free range animals as part of the web of life on the farms is extremely important to the members of the community. Intercropping with other fruit trees as shade for the coffee trees and subsistence crops is common.
