Why I’m obsessed: Ohhh, the coffee world isn’t anywhere close to being done with anaerobics, and have you noticed they’re getting better and better?? This one is a “soft anaerobic”, where the coffee cherries are carefully fermented in a low-oxygen environment (as opposed to no-oxygen), which pumps up a coffee’s natural sweetness without going overboard on fermenty, boozy flavor. Full disclosure, I’ve had anaerobic coffees from Humure station before and, as soon as I saw Little Waves carrying one, I already knew it was going to be good! Emmanuel, the owner of Humure station, compares this type of processing to a long, slow cooking method, to extract peak flavor potential from his beans. True to form, this is an exceptionally clean, sweet anaerobic coffee, with a punchy aroma and a complex, evolving profile: as I was drinking it, I just kept noting more flavors: darker dried fruits like fig or prune, watermelon candy, juicy grape, strawberry jam, silky milk chocolate, a warm, spicy coca-cola or dr. pepper note, and there’s this buttery, croissant-like note in the finish that I’m totally addicted to – I keep coming back for another sip! I love how this coffee plays on the typical juicy, grapey-floral Rwandan profile. And Little Waves roasts it perfectly: the flavors blend together in perfect harmony.
