Roaster's Notes
The farm of Pedro Sagastume is named for the proud, iridescent birds that inhabit the forests of the Santa Bárbara region. We love the feeling of beauty that the name "Los Quetzales" evokes as we sip on this stunning, vibrant natural processed coffee. The cup profile is complex fruit with an effervescent sweetness derived from the fruit pectin that remains on the coffee seed as it dries. The Los Quetzales estate itself is nothing short of magical - located at the base of a mountainous national park where the singsong of the tropical birds and the cries of howler monkeys follow you through the dense rows of lush, ripe coffee trees.
