When the dark roast artists of Fundamental Coffee Company tell us they’ve got something new for us, I always get excited. True to expectation, this coffee practically leapt off the cupping table with big, bold flavors. In fact, we fell so hard for this coffee, we reserved the entire tiny microlot for Bean Box customers! Exclusive to us, Honduras Zopilote Natural is a real “wow” coffee, bold but lively, and it takes to a darker roast like a dream. The luscious profile reminds us of aged Pedro Ximinez sherry wine. A departure from the usual red fruit of natural coffees, this one is spicier, more savory, with exotic notes of dates, figs, raisins, a syrupy, tropical-fruit body and a long, complex finish of caramelized sugars.
