Roaster's Notes

More than a thousand smallholders farm the slopes around Laguna de Ayarza, a crater lake in Guatemala's Santa Rosa department, and they sell their ripe cherry to a mill near the lake, where it's washed and dried in the sun on patios. Roasted light, it tastes like dark chocolate, mixed nuts, and golden raisin, with a silky body and acidity that stays mellow.
