Roaster's Notes
Andres Martinez produces this semi-washed Gesha at El Sendero farm in Cauca, Colombia, at 1,750 meters, where volcanic soils and high altitude slow cherry maturation and develop complex aromatics. His process includes 48-hour beer yeast fermentation, 24 hours in mucilage with constant stirring, and a careful two-phase drying process that takes nearly a month from cherry to dried parchment. This methodical approach produces exceptionally clean, sweet coffee. Notes of lavender, turbinado sugar, and London Fog tea through a silky body with mellow acidity.
