Meet Fiore Organic Roasting Company and its all-organic Peru Rancho Sabancaya. This bold, medium roast is spice, more spice, and everything nice, with a strong, smoky profile and lots of spicy flavors—brown sugar, cinnamon, and maple—within a creamy body like dark chocolate and almond butter. In the finish, a round sweetness emerges, like molasses, with a hint of baked apples and cinnamon toast.
As with all of Fiore's coffees, Peru Rancho Sabancaya is certified Fair Trade Organic, ethically sourced from a cooperative of 7,000 small farmers across the prime growing regions of northeastern Peru. One of Seattle's original organic cafes, Fiore has been a community coffee hub ever since former barista Deming Maclise bought the cafe in 2002 and made a commitment to source, and serve, only FTO and ethically-sourced beans. With its dark wood paneling and old-school appeal, Fiore's small Seattle cafes blend a classic, darker roasting style with a very modern sense of social responsibility.
