Roaster's Notes
Located in south-central Guatemala next to the beautiful Lake Amatitlán is Finca el Xalum, the Starry family’s coffee farm. With a longstanding history in this area dating back to 1821 and then becoming one of the largest coffee plantations in Guatemala in the 1930s, the Starry family is known for their exceptional quality and experimental processing of Bourbon variety cherries. Today, the farm is run by Christian Starry with help from his wife and son.
