Roaster's Notes

This unique "zero defect" lot celebrates our long-standing relationship with the Kochere Cooperative. These stalwart producers consistently deliver the ripest coffee cherries. At the same time, mill managers pay close attention to the weather during the drying process to ensure the beans are not dried too quickly. After being processed and rested, the green coffee is sorted an additional two times more than other lots, and sorters are paid three times the average wage. This extra income helps workers support their families and communities, highlighting the importance of specialty coffee premiums. Look for notes of candied citrus, honeydew, and hibiscus tea in the cup.
