Curator’s Notes: Most people don’t think of coffee as an agricultural product, much less a fruit. I didn’t either, until I began working in coffee and visiting the farms where it all starts. Once you’ve seen coffee flowers in bloom or watched coffee cherries ripen under the sun, it’s impossible to drink your morning cup the same way again. Personally, I’ll never forget the Colombian farmer who told me he pays attention to the tiny rainforest frogs that live in the rivers on his farm, because their presence means the ecosystem is healthy and his farming practices are in harmony with the land. Without a healthy environment, you simply can’t grow great coffee.

At Bean Box, we’re proud to work with roasters like Ruby who share that same respect for producers and place. With Tomorrow, Ruby sources fresh single-origin coffees from small Colombian farms that don’t have easy access to international markets. These relationships give farmers a way to showcase their coffees, set fair prices, and reinvest in their communities and infrastructure. The result? Incredibly high-quality, fruit-forward Colombian coffees with a rich, chocolaty backbone. The current lot is silky, sweet, and sunny, with lemon brightness, sweetness like canned peaches in syrup, and a clean, dark chocolate finish. This lot of Tomorrow comes to us from FABICOOP, whose members grow coffee around the town of Planadas, in the region of Tolima. The region has many small producers growing coffee alongside diverse shade crops such as bananas, as well as corn, beans, and sugarcane. Armed conflict has been a major part of this region’s history until recent decades, preventing Tolima from gaining recognition for its coffee despite the growth of the industry in neighboring regions.
