Roaster's Notes
Rigoberto Rodriguez produces coffee in the community of Quiscamote with help from Catracha Coffee. His small lot is honey processed, producing nearly zero waste. Once harvested by family and friends, coffee cherries are macerated overnight in cool air on raised beds then de-pulped the next day. Afterwards, coffee is fermented in tanks for 20 hours in a saltwater solution, which helps promote the fermentation process. The coffee then skips the washing stage and is placed on raised beds to dry in the sun, significantly reducing water usage. Additionally, the saltwater is reused for several fermentation batches and later incorporated into Rigoberto's compost.
