Roaster's Notes
Farmer Beto Naravez started growing coffee at 13 on a farm he built himself in Huila. This lot is a 36-hour cherry fermentation followed by 48 hours sealed anaerobic, finished with a hot-water "thermal shock" wash that Beto says locks the sugars in. Grown at 1550 MASL. The result: a papayo variety lot with more natural sweetness than his other bourbons, processed by a farmer who treats every fermentation hour with the attention and care it deserves.
