Roaster's Notes

Katia Duke runs San Isidro, her family's farm outside Ruinas de Copán, and she rebuilt the entire operation from the ground up after leaf rust took the 2012 crop. This lot fermented for 72 hours in sealed tanks with the fruit still attached, then dried slowly on raised beds, and it came off our cupping table as sweet as anything we've scored all year. Brûléed grapefruit, malt, and churro, carried on a buttery body with light acidity.
