Roaster's Notes
Yessica and Diego Parra are siblings, and the fourth generation in their family to grow coffee. They produce this Geisha at El Mirador, their farm in Pitalito, Huila, at 1,750 meters. Whole cherries fermented in open tanks for 60 hours, then dried slowly for about twenty days with the temperature held steady the whole way. Currant, violet, and rhubarb tart in the cup, with a juicy, velvety body and vibrant, punchy acidity.
