Curator's Notes
This farm is located on the shores of Lake Atitlán, the deepest lake in Central America. Pira uses its water for his own washing mill. This clean, sweet brew tastes like spicy cola syrup, with a finish of caramel and honey wine. It’s Juan good cup.
Roaster's Notes
Meet Juan Francisco Pira, a no nonsense kind of guy. His actions and quality speak for themselves. Juan has his hands in farming, wet milling, dry milling, and exporting. His farms are close to the mill, which helps preserve coffee quality due to shortened transit time. At the mill he has a quality control lab, cupping room, and recycles processing water which minimizes consumption. We’re honored to offer Juan’s coffee for the first time this year. Notes of chocolate, cola, caramel, and sweet white wine.
